Mom wanted my cornbread recipe so I thought I should share with everyone...it is so good. It's also a good thing to put on top of those
chilli pie or chicken potpie type of recipes. This recipe is from the book, "
Dining on a Dime" which is full of really good recipes that use common ingredients. Plus, the book has a recipe for homemade
chapstick (which was the
reason Mom got it for me!) If the end of the world comes or all the
chapstick trees freeze, I will be prepared!
Cornbread
2 c. baking mix (Bisquick or homemade version)
1/2 c. cornmeal
1/2 c. sugar
1/2 c. butter, melted
1 tsp. baking powder
2 eggs
1 c. milk
Preheat oven to 350. In a large bowl, stir all ingredients together. Blend until smooth. Pour into a greased 8x8 baking pan and bake for 30 minutes. Serves 9.
